It all starts with green (unroasted) coffee beans. The beans are soaked in pure water to create what’s called Green Coffee Extract (GCE) — a solution rich in the soluble compounds that give coffee its flavor, minus the caffeine. Then, fresh batches of green beans are introduced to this solution. Because of the caffeine imbalance, caffeine naturally migrates out of the beans and into the GCE, while the flavor compounds stay put.
